Boudin Balls

 

1 package Manda Boudin

2 Eggs

2 tbs Milk

Flour

Bread Crumbs

 

Make a slit in the casing of the boudin and peel the casing off, be sure to keep the boudin intact (for food safety, wash your hands after discarding the casing).  Cut the casing-free boudin links into ¾ inch squares.  Make an eggwash by mixing the eggs and milk together (you may use water instead of milk).  Dredge the cut boudin in flour, followed by the eggwash, and finished off in bread crumbs.  Make sure all sides of each boudin piece are coated.  Deep fry the boudin in oil at 350o for 2-3 minutes or until golden brown.  Remove from oil, drain on paper towels, and let cool for 1-2 minutes.

 

 

 

Fried Stuffed Bell Pepper Bites

 

1 package Manda Boudin

4 Bell Peppers

2 Eggs

2 tbs Milk

Flour

Breadcrumbs

 

Remove the tops and the inside pulp from the bell peppers.  Cut the bell peppers lengthwise into fourths.  Par boil the bell pepper pieces in water for 10 minutes.  Remove the peppers from the water and let cool.  Make a cut in the boudin’s casing and peel the casing away from the rice mixture.  Discard the casing and pour the rice into a bowl (for food safety, wash your hands after discarding the casing).  Form the boudin mixture into balls and place on top of each bell pepper piece.  Roll the bell pepper pieces around the boudin balls.

 

Make an eggwash by mixing the eggs and milk together (you may use water instead of milk).  Dredge the stuffed bell pepper pieces in flour, followed by the eggwash, and finished off in bread crumbs.  Make sure all sides are coated.  Deep fry the stuffed bell pepper pieces in oil at 350o for 2-3 minutes or until golden brown.  Remove from oil, drain on paper towels, and let cool for 1-2 minutes.

 

 

 

Mini Sausage Corn Dogs

 

1 package Manda Party Links

1 Egg

1 cup Flour

2/3 cup Corn Meal

¾ cup Milk

2 tbs Sugar

2 tbs Oil

1½ tsp Baking Powder

Corn Dog Sticks (optional)

 

Mix the flour, corn meal, sugar, baking powder, milk, oil, and egg together to make a batter.

 

If using corn dog sticks, insert the sticks into the Party Links.  If not using sticks, use a plastic fork  to stick in the Party Links so you can batter them without getting your hands messy.

 

Get your fryer up to 350o.  Dip the Party Links into the batter and drop them in the fryer (do not put the plastic fork into the fryer).  Fry the Sausage Corn Dogs until cooked.
